I'm planning a solo trip to Istanbul, Cappadocia and the south coast. Any advice?

The main tourist route is generally safe. Use normal city sense: watch your bag in crowds and be careful with overly friendly strangers who want to take you to a bar or carpet shop.
On long-distance buses, women travelling alone are usually seated next to other women. It's a standard practice.
Dress a bit more modestly outside the big cities and beach towns; it helps you blend in.
